S'mores Truffles: A No-Bake Dessert Recipe
There’s something about a campfire that just screams summertime to me. I always loved hanging out with friends around a backyard bonfire in high school, or roasting marshmallows around a campfire at summer camp. So I thought the best way to celebrate the end of the summer season is by treating ourselves with the best campfire snack…s’mores!
One of my recent favorite desserts to make, especially around the holidays, are these super simple Oreo truffles (via A Beautiful Mess). I made them for my family last Christmas and they were a huge hit! I am all about an easy no-bake dessert, especially one that uses limited ingredients.
So today I’m sharing my own version of no-bake truffles, with a summer s’more twist! And all you need are four basic ingredients!
Easy (Four Ingredient) No-Bake S’mores Truffles Recipe
You will need:
Graham crackers (14 full pieces)
Cream cheese (8oz block, softened) *I left my cream cheese out on the counter for about 30 minutes before
Mini marshmallows (1 cup)
Semi-sweet chocolate chips (1 cup)
STEP 1: Crush up 12 full graham crackers to end up with about 1.5 cups of graham cracker crumbs. I used my mini KitchenAid food processor to speed up this process. But you could also put the graham crackers in a plastic bag and roll a rolling pin over the top. They just need to be a dust-like consistency.
Keep 2 full graham crackers to the side to use for toppings.
STEP 2: Mix together the 8 oz block of cream cheese with the 1.5 cups of graham cracker crumbs until you form a dough-like consistency. I found this was easier to do with your hands. It is a messy process but worked better than a spoon!
STEP 3: Melt 1 cup of mini marshmallows in a microwave-safe dish until you have a marshmallow sauce. I microwaved my marshmallows for 15 seconds first, stirred, then another 10 seconds.
Add the melted marshmallow into the cream cheese mixture and stir until combined.
STEP 4: Using your hands, roll one-inch balls of dough and place on a cookie sheet with wax paper. This recipe makes about 15 truffles.
Place the cookie sheet in the freezer for about 20 minutes to chill the balls.
STEP 5: Melt 1 cup of semi-sweet chocolate chips in a microwave safe dish. I microwaved my chocolate for about 30 seconds, stirred, then another 30 seconds, etc. until the chocolate was fully melted.
STEP 6: Crush up the last two pieces of graham crackers by hand in a plastic bag, these pieces can be a bit larger to be used as a topping.
STEP 7: Individually drop each dough ball into the melted chocolate then pull it out with a fork under the ball. Tap the fork against the side of the bowl to remove any excess chocolate. Then place the truffle on a piece of wax paper on a baking sheet.
Top each truffle with a pinch of graham cracker crumbs immediately before the chocolate hardens.
Place the cookie sheet back in the fridge for about 20 minutes to fully harden the chocolate coating.
And your truffles are now ready to eat or share! Since these are cream cheese based truffles, be sure to store them in the refrigerator. These truffles make a great dessert to bring to parties or even a sweet gift idea packaged up all cute!
