Rainbow Sherbet Ice Cream Bars

I admire all my friends and family members who are bakers-extroirdinaire and can whip up a perfect pan of brownies from scratch or combine complicated ingredients that I have never heard of into a flawless sheet cake. I tend to lean towards the side of "make your desserts so cute looking that they won't notice that it was only 3 ingredients." So that is what I set out to do with these Rainbow Sherbet Ice Cream Bars. They are so easy to make, you barely need the tutorial. But your Easter guests will be OOH-ing and AAH-ing when they take their first bite.

Here's what you will need:

Ingredients:
- 1 package of Golden Oreos
- 4 cups of Vanilla Ice Cream
- 2 cups of Rainbow Sherbet Ice Cream
- 6 Tablespoons of melted butter
- Spring/Easter sprinkles (optional)

Step 1: Crush up 20 Oreos so that you're left with just crumbs. You can do this with a food processor or I just used a ziplock bag and a rolling pin.

Step 2: Add 3 Tablespoons of melted butter to your crumb mixture. Mix until the crumbs are fully coated.

Step 3: Flatten the crumb mixture into a 9"x9" pan. Make sure you line the pan with wax paper before so that the bars can be easily removed after freezing.

Step 4: Place pan in the freezer for about 15 minutes to start freezing the crumb mixture so that you have a some-what solid surface to add your ice cream on top.

Step 5: Ice Cream!! Add one layer of vanilla ice cream. Using a spatula, try to flatten the layer and cover the entire pan. For this step I used about 2 cups of vanilla ice cream. It's a bit easier if you leave the ice cream out to defrost a bit before so that it goes on smoother.

Step 6: Place the pan in the freezer again for 15-20 minutes between each layer. Repeat step 5 with a layer of rainbow sherbet ice cream. And then again with another layer of vanilla ice cream. 

Step 7: Meanwhile (while you're freezing between layers), you can start making your second layer of the Oreo crumble. Repeat steps 1 and 2, crushing another 20 Oreos into crumbs and mixing with 3 tablespoons of butter. Stir mixture and add in a handful of your favorite spring/Easter sprinkles!

Step 8: Flatten this new mixture onto the top of your ice cream layers.

Step 9: Freeze for a few hours, (overnight would be best!) to ensure that the ice cream is frozen solid. It can then be pulled out of the pan with the wax paper and cut into bars to serve! Enjoy!

This sweet treat will make a perfect dessert for your Easter lunch. Or even just a fun activity to make with your kids if they're home on Spring Break. There are also countless variations you can make for other occasions by just switching out the middle ice cream layer; mint for St. Patrick's Day, strawberry for Valentine's day, birthday cake for a Birthday party, etc. etc. What are your favorite ice cream flavors?
